Once you've the header finished you can click the "close" button on the header/footer toolbar. You will now observe that the header section is grayed out and the rest of your document has become enabled. Any typing that you do now will not affect your header.
If there comes a period when you want to edit your header section you can follow the steps described above or you can double click the header information with your mouse. Given that you really have a header in your document the double click process will work, where as when you didn't have a header yet, therefore double clicking in the area where the header would go will do absolutely nothing.
